Vegan Peanut Butter Cookies Recipe

Vegan alternative to an old favorite. I took a traditional recipe and used substitutions for the egg and dairy. I also cut out the refined sugars, substituting demerara (natural cane), maple syrup and molasses. All of the changes reduced the calories and cut the fat in half. Tested this recipe on 3 guys and none of them could tell it was an alternate version. :)

Recipe Ingredients for Vegan Peanut Butter Cookies

4 tbsp water
2 tbsp canola oil
4 tsp baking powder
3/4 cup maple syrup
1 tbsp molasses
1 cup demerara sugar
3/4 cup soy margarine, softened
1 teaspoon vanilla extract
2 cups whole wheat flour
1 teaspoon baking soda
1/2 cup natural peanut butter
1/2 cup chopped unsalted peanuts
1 cup chopped pecans (optional)

Recipe Directions for Vegan Peanut Butter Cookies

Mix together water, canola oil and baking powder. Mix in rest of ingredients. Chill batter for 30 min (also chill between batches). Drop cookies onto pan and do not flatten. Bake 12-14 minutes at 375 until edges of cookie are lightly browned. Let cool on pan 5 minutes before transferring cookie to cooling sheet.
