Recipe Ingredients for Vegan pancakes

1 cup whole wheat flour
2/3 cup unbleached white flour
2/3 cup rolled oats
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons sugar
1/2 teaspoon salt
5 1/2 tablespoons margarine
3 cups soy milk
2 teaspoons white vinegar

Recipe Directions for Vegan pancakes

  1. Combine dry ingredients in food processor and process thoroughly.

  2. Combine soy milk and vinegar in separate vessel

  3. Add soy margarine to food processor and process until "sand-like"

  4. Transfer flour-margarine mixture to a large bowl, make a well in the center, and add soy milk-vinegar mixture. Whisk.

  5. Pan fry 4oz of pancake batter with 1 tablespoon of vegetable oil or soy margarine.

  6. Serve immediately with soy margarine, syrup, powdered sugar or fruit spread.
