Easy, low-fat vegan pancakes. The batter will keep overnight, so you can make it ahead and save time in the morning!

Recipe Ingredients for Vegan Pancakes

1 1/2 cups light soymilk
1 cup spelt flour
1/3 cup whole wheat flour
1 T sugar
1 tsp baking soda
1 tsp pure vanilla extract
1/4 tsp salt

Recipe Directions for Vegan Pancakes

  1. Combine all ingredients in a blender or mixing bowl.

  2. Blend until mixed, scrape down sides, and blend again.

  3. Cook on a hot griddle.

  4. Serve with Earth Balance, maple syrup, fresh fruit - or whatever your favorite pancake toppings are.

  5. NOTE: If you store the batter overnight, it may thicken, so you might want to add a couple tablespoons of water or soymilk in the morning!
