Great, hearty soup with lots of fiber and simply an amazing taste. Vegan all the way (I am, by the way, not a vegan, but by following a vegan diet for the past 2 weeks I have lost 9 pounds!), healthy, and SO filling! Definitely throw in some chilis for additional flavor (I use 5-8 birds-eye chilis)

Recipe Ingredients for Vegan Palak Daal Soup

1 cup dry lentils
6 cups water
1 pound spinach, washed
1 tablespoon ginger, peeled and finely chopped
1/2 teaspoon turmeric
2 tomatoes, chopped
1/2 teaspoon salt
1/2 teaspoon cumin

Recipe Directions for Vegan Palak Daal Soup

  1. In a large pot over medium-high heat combine the daal and water.

  2. Bring to a boil, then add the spinach, ginger, turmeric, 3/4 of the chiles, and all of the tomatoes. Reduce the heat, and simmer (covered) for 1 1/2 hours or until the lentils are extremely soft. You may need to add a bit more water to achieve your own desired consistency of soup.

  3. After an hour and a half, stir in the salt and cumin seeds.
