Recipe Ingredients for vegan pad thai

12 oz Rice Noodles, Dry
8 oz Extra Firm
6 Teaspoon Soy Light Sauce
1 cup, chopped Peppers, Sweet, Red
4 medium (4-1/8" long) Onions, Spring Or Scallions
1 clove Garlic
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 tsp Sweet'N Low
2 serving Rice Vinegar
1/2 Pack Bean Sprouts
0.25 cup Peanuts, All Types, Dry-roasted

Recipe Directions for vegan pad thai

  1. prep rice noodles by plunging into boiling water to soften, drain and place in bowl, toss with peanut oil.

  2. brown tofu ( can bake ahead)

  3. add soy sauce to tofu for flavor (opt)

  4. saute peppers scallions, garlic to stir fry. add tomato sweetener, vinegar and soy sauce (opt)

  5. toss noodles after 5 min.

  6. add tofu.

  7. divide into servings and top with bean sprouts and peanuts.
