A vegan version of an old favorite. I took a traditional recipe and used substitutions for the egg and dairy. I also cut out the refined sugars, substituting maple syrup and molasses. All of the changes reduced the calories, fat and sugars.

Recipe Ingredients for Vegan Oatmeal Raisin Cookies

3 tbsp water
1 1/2 tsp canola oil
1 tsp baking powder
3 tbsp soy margarine, softened
6 tbsp maple syrup
1 tbsp molasses
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 tsp cloves
1/2 cup raisins
1 1/2 cups quick oats
1/2 cup whole wheat flour
1/4 tsp baking soda

Recipe Directions for Vegan Oatmeal Raisin Cookies

Mix together water, oil and baking powder. Add margarine, maple syrup, molasses and vanilla. Stir in remaining ingredients. Chill batter for 30 min (also chill between batches). Drop onto baking pan and bake for 12-15 min at 350. Cool for 5 minutes before transferring to cooling rack.
