Recipe Ingredients for Vegan Oatmeal Chocolate Chip Cookies

1 cup Margarine
1 1/2 cups brown sugar (tightly packed)
1 cup granulated sugar
2 oz. Cinnamon applesauce (half of one of those little cups of applesauce that comes in a 4- or 6- pack)
4 teaspoons Vanilla extract
2 tablespoons soymilk (or almond- or ricemilk)
2 cups whole-wheat flour
1 teaspoon baking powder (stirred into the flour)
2 3/4 cups rolled oats (instant works well)
2 1/2 cups vegan chocolate chips

Recipe Directions for Vegan Oatmeal Chocolate Chip Cookies

  1. Beat together margarine and sugars in a large bowl (by hand, you don't need an electric mixer for this one).

  2. Add the applesauce and mix.

  3. Add the vanilla and mix.

  4. Add the soymilk and mix. This will try to separate out, but keep mixing gently.

  5. Slowly add the dry ingredients in about half-cup increments.

  6. The batter should be fairly dry in the end. If too moist, add more oats as needed. If the batter is too wet, then the cookies will flatten while baking and turn out hard.

  7. Bake for about 10 --12 minutes at 375 degrees Fahrenheit on an ungreased cookie sheet. Let the cookies sit for a few minutes then transfer them to a rack to cool. Store in an air-tight container
