Vegan Oatmeal Banana & Blueberry Muffins

Recipe Ingredients for Vegan Oatmeal Banana & Blueberry Muffins

2 cups oats
6 tbsp brown sugar
2 cups whole wheat flour
1 tsp salt
5 tsp baking powder
2 cups mashed bananas
1 cup soy milk
14 tbsp flax meal
1 cup blueberries

Recipe Directions for Vegan Oatmeal Banana & Blueberry Muffins

  1. Preheat oven to 350.

  2. Mix all ingredients in a bowl.

  3. Spray muffin pan with olive oil spray or use paper baking cups.

  4. Add mix to muffin pan.

  5. Bake for 35 minutes or until tops start to turn golden brown.
