Healthy, delicious vegan banana muffins Home-made oat flour made by toasting oats in the oven for about 10 minutes, then putting in a food processor.

Recipe Ingredients for Vegan Oat Banana Muffins

4 large bananas
1/3 cup brown sugar
1/2 cup flax seed meal
1 tsp vanilla extract
1 cup oat flour
1 tsp baking soda
1 cup oats
1 pinch salt

Recipe Directions for Vegan Oat Banana Muffins

  1. place oat flour, oats, baking soda and salt in a bowl and mix until combined, set aside

  2. place bananas, brown sugar and flax seed meal into a large bowl, and mash with a potato masher until well combined

  3. add vanilla extract and mix into banana mixture

  4. mix in dry ingredients until just combined.
