Wanted a yummy, thick rick navy bean soup, but without the ham hocks and with some added nutrition.

Recipe Ingredients for Vegan Navy Bean Veggie Soup

3 cup Navy Beans
1/4 cup Olive Oil
3 carrot (7-1/2") Carrots
1 large Onions
3 tsp Crushed Garlic
4 Cube Vegetable Stock Cubes
16 oz Frozen Collard Greens
2 tsp Natural Hickory
28 oz Petite Cut Diced Tomatoes
10 cup (8 fl oz) Water

Recipe Directions for Vegan Navy Bean Veggie Soup

  1. put beans in pot of water, and boil hard for about 30 minutes

  2. skim off any scum

  3. add remaining ingredients, and simmer till beans are soft.
