Make ahead and keep in refrigerator; bake as needed.

Recipe Ingredients for Vegan Naan

2 cups whole wheat flour
2 cups unbleached all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cumin (optional)
457 grams plain soy yogurt

Recipe Directions for Vegan Naan

  1. Mix together flour, baking powder, salt and cumin in large bowl. Stir in soy yogurt and mix together well until the dough is too stiff for the spoon. Knead in the bowl until it holds together well, adding more flour if necessary.

  2. Turn it out on floured surface and knead until the dough feels smooth and elastic. Form the dough into a ball and put in an oiled bowl and cover with moist towel. Let rest for an hour, or longer.

  3. Cut the dough into 10 equal pieces and, if not using immediately, place in plastic container with tight-fitting lid and place in refrigerator. Use within the next 14 days.

  4. To bake: preheat oven to 500 degrees. Roll out each ball on floured surface until 8-10 inches across and about 1/4" thick. Bake about 4 minutes.
