Vegan Moussaka with Falafel/Portobello mix for meat and silken tofu/almond milk for béchamel sauce.

Recipe Ingredients for vegan moussaka

1 Eggplant
1 1/2 Zucchini
1 Onion
3 tomato, diced
2 (46g) mushroom
1/2 cup Almond milk
1 tsp tahini
1 cup chickpea
4 slice silken tofu

Recipe Directions for vegan moussaka

  1. Broil Eggplant and Zucchini

  2. Blend Portobello mushrooms and falafel mix in food processor

  3. Cook tomatoes, onion and any seasoning (Parsley and Tumeric) into tomato sauce

  4. Cook 'Béchamel Sauce': Almond Milk, Silken Tofu, Tahini, I added Cinnamon

  5. Layer Eggplant and Zucchini, Mushroom/Falafel, Tomato sauce and Béchamel sauce, ending with Béchamel sauce.

  6. Bake at 375 for 45 min.
