Yummy minestrone soup, hearty and filling on a chilly winter's day

Recipe Ingredients for Vegan Minestrone Soup

15 oz black beans
15 oz dark red kidney beans
15 oz corn
28 oz crushed tomatoes
30 oz diced tomatoes
2 zucchini, diced
2 medium onions, chopped
1/2 c diced celery
4 cloves garlic, minced
1 T italian seasoning
2 T. low sodium soy sauce
4 g sucanat
3 c shredded cabbage
1/2 c whole wheat macaroni, dry
1 c water
1 T extra virgin olive oil

Recipe Directions for Vegan Minestrone Soup

  1. Open all cans

  2. Drain and rinse beans well

  3. Heat evoo in dutch oven, saute onion, celery and garlic til onion softens

  4. Add italian seasoning, and zucchini, saute til zucchini begins to soften, then add cabbage

  5. Saute til cabbage begins to wilt, and add tomatoes, beans, corn and water, bring to a brisk simmer

  6. Add macaroni, and simmer til pasta is cooked.

  7. Really yummy with a sprinkle of Daiya cheese or parmasean
