Recipe Ingredients for Vegan Miner's Hearty Vegetable Soup

1 tablespoon oregano
1/4 teaspoon cloves
1/2 teaspoon paprika
1/2 teaspoon pepper
1 teaspoon salt
2 tablespoons olive oil
1 cup onions, chopped
8 cups water
3 cups whole tomatoes, chopped
2 cups carrots, chopped
1 cup celery, sliced
3 cups potatoes, chopped
1 cup corn
2 cups okra, sliced thick
3 tablespoons cornstarch
1/4 cup water

Recipe Directions for Vegan Miner's Hearty Vegetable Soup

In large soup pot, light brown onion in olive oil over medium heat. Add carrots and celery and saute a little longer. Add water. I used my own homemade vegetable broth. Now add the rest of the vegetables. Add the spices. Simmer, uncovered, for 30 minutes or until done. Blend the 1/4 cup of water with the cornstarch add some of the hot liquid to it and then stir mixture into the soup.
