This is a modified version of "Not Your Mama's Meatloaf", from the Vegan Vittles cookbook.

Recipe Ingredients for Vegan "meat loaf"

9.34 servings seitan, ground
2 teaspoons olive oil
1 large onion, chopped
1 medium carrot, shredded
2 cloves garlic
1 cup whole grain bread crumbs
1/2 cup oats, dry
0.34 cup peanut butter, smooth
0.34 cup tomato sauce
1/2 cup tomato sauce
1 tablespoon soy sauce
1/4 teaspoon black pepper
0.24 teaspoon thyme, dried
1/4 cup parsley, minced

Recipe Directions for Vegan "meat loaf"
