Vegan Mayonnaise made from silken tofu. Makes 3 cups. Serving size is 1 tbsp.

Recipe Ingredients for Vegan Mayonnaise (Tofu-based)

1 3/4 cups water (lightly salted)
8 oz (1 cup) silken tofu
2 tbsp lemon juice
1/4 tsp salt
1 tsp nutritional yeast (or brewer's yeast)

Recipe Directions for Vegan Mayonnaise (Tofu-based)

  1. Bring the salted water to the boil, add the tofu and bring back to the boil.

  2. Immediately remove from the heat and leave for 3 minutes.

  3. Drain the partially cooked tofu.

  4. Place it in a food processor together with the lemon juice, salt and nutritional yeast.

  5. Process until smooth.

  6. Refrigerate until ready to use. Do not re-cook!
