Adopted from 1000 Vegan Recipes Makes 2 cups; for easy math, have assumed 1 serving = 1 cup. In other recipes where this recipe is referenced, 3/4 cup = 75% of a serving.

Recipe Ingredients for Vegan Mayo

12 oz silken tofu
2 tbs apple cider vinegar
1 1/2 tbs dijon mustard
1 tsp sugar
1/2 tsp salt
1/8 tsp turmeric
1/8 tsp cayenne

Recipe Directions for Vegan Mayo

  1. In a food processor or blender, combine all the ingredients and process until smooth and well combined. Taste, adjusting seasonings if necessary.

  2. Scrape the mayonnaise into a container with a tight fitting lid, cover and refrigerate until needed. Properly stored it will keep up to 5 days.
