A vegan version of the greatest comfort food of all. Really yummy.

Recipe Ingredients for Vegan Macaroni and Cheeze

1 lb macaroni
2 yukon gold potatoes, medium, peeled and diced
1/3 cup macadamia nuts
1/3 cup cashew nuts
1 carrot, medium, peeled and diced
2/3 cup onion, chopped
2 1/2 cups water
2/3 cup canola oil
2 teaspoons sea salt
2 cloves garlic
1/4 teaspoon dry mustard
1 tablespoon lemon juice
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper

Recipe Directions for Vegan Macaroni and Cheeze

Heat oven to 350 degrees. Prepare macaroni according to directions. Bring water to boil and add potatoes, carrot and oinion. Boil until soft. Add the rest of the ingredients to a high speed blender. Add veggies when soft and blend them too. Place cooked macaroni in 3 quart oven proof dish and add blended sauce and mix together. Bake for 30 minutes and enjoy. You can add breadcrumbs or sliced tomatoes on top prior to baking if you like.
