I couldn't get this to take the addition of 1c of Daiya Cheddar Cheese, so I just add it to my food log separately. 1/4 cup per serving. I haven't made this yet, but it should be simple.

Recipe Ingredients for Vegan Mac n' Cheese Base

4 c cooked whole wheat elbow macaroni
2 c almond milk unsweetened
1/2 c onion
2 T wheat flour
1 T olive oil

Recipe Directions for Vegan Mac n' Cheese Base

  1. Saute onions in nonstick skillet.

  2. Add in most of the milk, reserving some to blend flour.

  3. Add that in and stir until thick.

  4. Add cheese.

  5. Salt & pepper to taste.

  6. Toss with macaroni.

  7. Bake for 30-60 minutes at 350. You could add some bread crumbs to the top if you want. I can't wait that long ... I'm hungry now!
