Nutritional yeast FLAKES + **ADD 1 tbsp roasted red pepper hummus** (or 1 tsp EVOO)

Recipe Ingredients for Vegan Mac and Cheese

77 g macaroni
1/2 cup soy milk
2 tsp egg whites
2 tbsp nutritional yeast
75 g tofu
1 tsp dijon mustard
1/4 tsp paprika
1/4 tsp garlic powder

Recipe Directions for Vegan Mac and Cheese

  1. Cook macaroni, as per directions, until al dente.

  2. While macaroni is cooking, place all other ingredients in a blender and blend for 5 minutes, until very smooth.

  3. Drain macaroni and return to pot over medium heat. Add sauce and bring to bubbling. Cook, stirring constantly, until sauce thickens and reduces a bit (about 5 mins)
