A vegan adaptation of my mother's mac and cheese recipe.

Recipe Ingredients for Vegan Mac and Cheese

10 ounces vegan cheddar cheese, shredded
2 tbsp vegan margarine
2 cups soy milk
1 pound whole wheat elbow macaroni, cooked

Recipe Directions for Vegan Mac and Cheese

  1. Heat margarine and soy milk over low heat until margarine is completely melted.

  2. Using a whisk, add a handful of cheese at a time stirring constantly. Add another handful once the cheese is completely melted.

  3. Add the completed sauce to the cooked and drained pasta and mix.
