a vegan take on meatloaf found on engine2diet.com labeled Lynn's Meatloaf. I added carrot to this one and rosemary, thyme, and basil.

Recipe Ingredients for Vegan-loaf

10 oz Organic Tofu, Extra Firm
0.5 medium (2-1/2" dia) Onions
1 medium Carrots
3 stalk, medium (7-1/2" - 8" long) Celery
1.5 cup Lentils, Mature Seeds
3 tbsp Perfect Squeeze Ketchup
1 tsp Spicy Brown Mustard
1.5 oz Soy Sauce
1.5 cup dry Quick Quaker Oats

Recipe Directions for Vegan-loaf

  1. sautee garlic, onion, celery, and carrots in a skillet using vegetable stock.

  2. mash tofu in a bowl

  3. add sauteed mixture and cooked lentils and all the other ingredients and mix well

  4. spray pan and press mixture into loaf pan

  5. bake at 350 for roughly an hour
