Recipe Ingredients for Vegan Lentil Burgers

1 cup dry lentils, cooked in 2 cups water
1 cup shredded carrots
1 medium onion, finely chopped
1 cup diced zucchini
1 cup celery, diced
2 cups quick oats
1/8 cup extra virgin olive oil
1/8 cup sesame oil
1 cup ketchup
1 teaspoons sea salt
1/4 teaspoon black pepper

Recipe Directions for Vegan Lentil Burgers

  1. Simmer lentils, covered, until fully tender (20 to 25 minutes).

  2. Mix all ingredients together in a bowl.

  3. Form into patties and place on an oiled cookie sheet, pressing each pattie firmly together.

  4. Bake at 350 degrees until golden brown for about 20 to 25 minutes on each side.

  5. They are delicious hot or cold, and they freeze really well. These have a lot of flavor and are very healthy, filled with protein, fiber and nutrients.

  16. 2 teaspoons to 1 tablespoon sea salt

  17. 1/4 teaspoon black pepper
