Recipe Ingredients for vegan lemon risotto with peas and scallions

1.5 cup Arborio Rice
4 cup Vegetable Stock
0.25 cup Lemon Juice
0.5 cup, chopped Onions, Spring Or Scallions
0.66 cup Peas, Green
1 dash Pepper, Black

Recipe Directions for vegan lemon risotto with peas and scallions

  1. bring stock and lemon juice to a simmer in a medium pan over medium heat. simmer on low.

  2. in a skillet add rice and scallions then 1/2 cup of hot liquid until almost absorbed. add liquid 1/2 cup at a tine until rice is tender but firm and mixture is thick and creamy. stirring constantly. 25 minutes.

  3. 10 minutes before risotto is finished stir in peas, salt and pepper to taste.

  4. serve in shallow bowls and serve hot.
