Recipe Ingredients for Vegan lemon coconut mini cupcake

220 g coconut milk
40 g canola oil
100 g soy milk
50 g sugar
15 g lemon juice
80 g Coconut
140 g flour
3 g baking powder
1 g baking soda

Recipe Directions for Vegan lemon coconut mini cupcake

  1. Mix all wet ingredients in a bowl making sure there's no clumps.

  2. Add all dry ingredients.

  3. Bake at 180g for 20minutes.

  4. Can add lemon icing & toasted coconut on top if desired (confectioner's sugar+water+lemon juice)
