Recipe Ingredients for Vegan Lasagna

240 g kamut pasta 104352
336 g silken tofu 16165
3/16 cup nutritional yeast, ground 127112
2 fl oz almond breeze 101654
3 cups spinach
1 onion
2 cups mushroom
4 clove garlic
300 g celery
1 green pepper
700 g pasta sauce 87519
156 g tomato paste
2 tbsp basil
2 tbsp tarragon
2 tbsp thyme
1 tbsp salt
300 g soy cheese 57736
6 tsp vegan topping 123751
1 tbsp olive oil
10 cherry tomatoes

Recipe Directions for Vegan Lasagna

  1. Cook 9 lasagna noodles. Set aside.

  2. Saute chopped vegetables (not spinach or tomatoes) in oil.

  3. Add to pasta sauce.

  4. Put sauce over heat and add chopped herbs, salt, tomato paste and cherry tomatoes (cut in halves). Simmer 15 minutes or more.

  5. Chop spinach into small bits.

  6. Chop/crumble tofu.

  7. Mix spinach, tofu, almond breeze and nutritional yeast.

  8. Put layer of tomato sauce in lasagna pan, then layer of noodles, then tofu layer, then noodles, then tomato sauce, then noodles than tiny bit of tomato sauce.

  9. Top with grated soy cheese and vegan topping.

  10. Bake half an hour at 350F or until heated through.
