Mock Italian wedding soup made vegan style.

Recipe Ingredients for Vegan Italian wedding soup

4 cup Organic Vegetable Broth
3 cup, chopped Kale
2 oz Gimme Lean Sausage Style
8 oz Orzo Dry
1 serving Extra Virgin Olive Oil
1 tbsp Original Natural Buttery Spread
1 cup, diced Celery
12 oz Water

Recipe Directions for Vegan Italian wedding soup

  1. Saute celery in olive oil and butter spread.

  2. Add kale (note: escarole can be used instead)

  3. Add small meatballs made from Gimme lean

  4. Add broth and water

  5. bring to boil

  6. add orzo

  7. simmer on medium for 12 minutes (or until orzo is cooked)

  8. simmer on low for another 20 minutes until Kale is cooked.

  9. let sit for 10 minutes.
