Recipe Ingredients for Vegan Italian Bean Casserole

1 cups cannellini beans
2/3 cup garbanzo beans
2 cups polenta
2 tbsp pesto
1 onion
4 cloves garlic
6 cups spinach
3 1/2 cups cherry tomatoes
180 g Rice Shreds Mozzarella Flavor

Recipe Directions for Vegan Italian Bean Casserole

  1. Cook the dry beans. Alternatively, use 2 cans (rinsed) cannellini and 1 can garbanzo. You need about 7-8 cups total of cooked beans. Combine the beans with the minced onion, garlic, pesto, and spices.

  2. Layer a slow cooker with 1/2 the beans, then 1/2 the sliced polenta, top with cheese and repeat. Cook on low for 4-6 hours. Top with veggies and cheese and cook another 15-30 minutes to wilt the spinach.
