One of many variations on one of the world's most fantastic dishes. This one uses no fish sauce, unlike the original version.

Recipe Ingredients for Vegan Green Curry with Broccoli and Pineapple

13 1/2 oz coconut milk
4 oz. green curry paste
3 tsp. brown sugar
3 tsp. soy sauce
2 cups broccoli, chopped
1 cup pineapple, chopped

Recipe Directions for Vegan Green Curry with Broccoli and Pineapple

Heat the coconut milk, curry paste, sugar, and soy sauce, plus 1/2-1 cup of water (unless you want a thick sauce). Once hot, add the broccoli, cook for about 10 minutes or until it has softened a bit. Add the pineapple chunks and let them heat for another 5 minutes. Serve over brown or white steamed rice.
