Recipe Ingredients for Vegan Green bean casserole

1 tablespoon salt
1 1/2 lb. fresh green beans
10 oz mushrooms
1/16 tablespoon ground pepper
3 cloves garlic
1/4 teaspoon cayenne pepper
2 tablespoons flour
3/4 cup vegetable broth
3/4 cup coconut milk
2 slices whole wheat bread
2 tablespoon soy margarine
1/8 teaspoon salt
1/16 teaspoon ground pepper
6 oz french fried onions

Recipe Directions for Vegan Green bean casserole

  1. Saucy beans: Boil 2 quarts of water with the 1. t. salt

  2. Do up the beans into bite size and boil, covered for 6 minutes

  3. Then rinse with cold water (1 min) and drain

  4. Spray a pan with cooking oil and heat.

  5. Then add: mushrooms (chopped), peppers and garlic (minced) until shrooms are very soft

  6. Whisk in flour and veggie broth and simmer n stir until thicker

  7. Add the coconut milk and simmer and thicken (5-10 mins).

  8. Add the beans and mix it up, adjusting the spices if ya want

  9. Topping: food process/Bullet bread, margarine, salt and pepper until crumbly

  10. Mix the mixture with the french fried onions

  11. Combine in greased casserole dish: beans on the bottom, crumblies on the top

  12. at 425 F for 15 minutes

  13. P.S. Maybe save some crumblies to sprinkle on leftovers so there's some crunch the 2nd time around
