grains, legumes, butternut squash and tomatoes

Recipe Ingredients for Vegan goodness

1/4 cup brown and wild rice blend
1/4 cup dry barley
1/4 cup dry lentils
1/4 cup dry white beans
420 g Diced with Basil Garlic and Oregano No Salt Added Tomatoes
3 cups raw chopped butternut squash
1 tbsp smart balance oil

Recipe Directions for Vegan goodness

  1. grains + legumes + 5 cups water into a crockpot

  2. cook on low all day

  3. add in the can of tomatoes

  4. bake squash, cut up in small cubes and tossed with the olive oil, at 350 for 40 minutes.

  5. Add squash to the rest of the concoction.

  6. I added more salt-free garlic and herb seasoning as well as red pepper flakes to mine and will keep it in fridge to eat for lunches or dinners this week. I eat it with ketchup!
