Vegan, Gluten Free, Organic Indian Curry

Recipe Ingredients for Vegan/ Gluten Free Curry

450 grams Eggplant
2 cup, chopped Broccoli
2 tbsp Olive Oil
2 clove Garlic
0.05 cup (8 fl oz) Water
1/4 tsp Cayenne
0.25 tsp Paprika

Recipe Directions for Vegan/ Gluten Free Curry

  1. Sautee the eggplant and broccoli in the olive oil over high heat for 3-5 minutes, until eggplant is lightly browned.

  2. Add salt, asafetida, cayenne and paprika and stir to mix well.

  3. Reduce heat to medium low. Add water and cover. Allow to cook another 5-7 minutes, until broccoli is tender.

  4. Serve over rice if desired and enjoy your Indian style
