Recipe Ingredients for Vegan Gingerbread Cookies

1/3 cup canola oil
3/4 cup sugar
1/4 cup molasses
1/4 cup plain soy milk
2 cups whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 tsp cloves
1/2 tsp cinnamon
1 1/2 teaspoons ginger

Recipe Directions for Vegan Gingerbread Cookies

  1. mix sugar and oil well. add molasses and soy milk.

  2. mix remaining dry ingredients. gradually add dry mix to wet mix.

  3. chill in refrigerator for about an hour.

  4. roll thin and cut into shapes, or simply place flat disks onto a cookie sheet.

  5. bake at 350 for 8 minutes or so.
