Recipe Ingredients for Vegan Fruit and Nut Breakfast Cookies

104 g Stevia Sweetener
1/3 cup coconut oil, melted
3 Egg, Whole
3 tbsp ground flaxseed
9 tbsp warm water
1/4 cup dried apricots, chopped
1/4 cup dried cherries, chopped
1/4 cup dried peaches, chopped
1 tsp vanilla extract
1 cup whole wheat pastry flour
1/2 cup all-purpose flour
1/4 cup 7 Whole Grain Nuggets
2 tbsp wheat germ
1 tsp ground cinnamon
1/4 cup Coconut
1/4 cup Raw Sunflower Nuts All-Natural

Recipe Directions for Vegan Fruit and Nut Breakfast Cookies

  1. Preheat oven to 350 degrees.

  2. Combine Stevia, coconut oil, and eggs in large mixing bowl.

  3. Stir in dried fruits and vanilla extract.

  4. Spoon in flours, Kashi, baking soda, wheat germ and cinnamon. Mix together.

  5. Add dry mixture to wet mixture, stirring until just combined.

  6. Fold in the pistachios.

  7. The dough will be dense. I actually use my hands to knead the ingredients together.

  8. Roll into balls and place on baking sheets lined with parchment paper.

  9. Slightly flatten the cookies with the back of spoon or palm of the hand.

  10. Bake for 10-12 minutes or until almost set.

  11. Cool on pans and transfer to wire racks to cool completely.
