Recipe Ingredients for Vegan Fruit and Nut Bars

1 cup dates
1 cup water
1 1/2 cup oats
1 cup pecans
1/2 cup macadamia nuts
55 g dried papaya
1/3 cup dried cherries
1/3 cup dried blueberries
2 tbsp oat bran
3 tbsp ground flax
2 tbsp wheat germ
1/2 tsp salt
1/2 tsp cinnamon
3 tbsp honey

Recipe Directions for Vegan Fruit and Nut Bars

  1. Preheat oven to 350 F.

  2. Heat dates and water to a simmer in small saucepan. Drain (optional). Puree in food processor. Set aside to cool.

  3. Toast nuts. For each type of nut, coarsely chop half and grind half.

  4. Chop dried papaya into small pieces. Chop dried cherries in half.

  5. Mix all ingredients well except dates and honey.

  6. Add dates and honey. Mix well. Press mixture evenly into an 8" square pan that has been sprayed with cooking spray.

  7. Bake for 25 minutes.

  8. Let cool in pan then cut into 16 squares. (Original recipe said 8 - but they're really filling!)
