Good recipe. Eggs are replaced with flax meal and milk with soy milk.

Recipe Ingredients for Vegan Flax Crepes

1 cup white whole wheat flour
2 tbsp flax meal
2 cups light soy milk
1/4 cup water
1 dash almond extract

Recipe Directions for Vegan Flax Crepes

  1. Mix flax meal with warm water and let set about 2 minutes

  2. Stir flax mixture into the soy milk then add in the dash of almond extract

  3. Mix this into the white whole wheat flour. Adjust thickness by adding more soy milk or water.

  4. Cook like regular crepes, just a tad longer.
