Chickpeas replace tuna, tofu replaces egg. Use a non-egg mayo replacement. Try adding 1/2 cup coarsely chopped carrots 1 teaspoon Old Bay Seasoning 1/2 teaspoons smoked paprika or 1 tablespoon lemon juice

Recipe Ingredients for Vegan Faux Tuna Salad

30 oz canned chickpeas
15 oz tofu
3 stalks celery
1/4 red onion
1 dill pickle
2 T tamari
1/2 T rice wine vinegar
1 1/2 t kelp
1/4 cup (Trader Joe's) Reduced Fat Mayonnaise

Recipe Directions for Vegan Faux Tuna Salad

  1. Dice vegetables.

  2. Mash chickpeas and tofu with diced vegetables in a bowl.

  3. Add remaining ingredients and mix.
