Recipe Ingredients for Vegan Eggplant Pamasian

3 large eggplant
4 medium tomatoes, sliced
3/4 cup olive oil
2 cloves garlic
3 red peppers
1/2 cup bread crumbs
4 ounces cream cheese
4 oz mozzarella cheese
4 cups arugula
1 cup tomato, crushed
1 cup fresh basil

Recipe Directions for Vegan Eggplant Pamasian

  1. Slice tomatoes, eggplant thin ( about 1/2 inch thick slices

  2. baste with olive oil and garlic

  3. roast until just brown

  4. layer with arugula, basil, vegan mozzarella cheese, and bread crumbs

  5. bake at 35 0 for about 35 minutes covered.

  6. Remove cover, bake for an additional 15-20 minutes uncovered.

  7. Let sit for 15 minutes before serving.
