Recipe Ingredients for Vegan eggplant lasagna

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 cup Organic Cherry Tomatoes
1 tbsp Extra Virgin Coconut Oil
1 clove Garlic
2 large Onions, Spring Or Scallions
1 carrot (7-1/2") Carrots
0.5 cup leaves, whole Basil, Fresh
1 cup Tomato Juice

Recipe Directions for Vegan eggplant lasagna

  1. In large nonstick skillet sprayed with coconut oil, quickly brown eggplant slices; set aside. In the same skillet in hot coconut oil, cook onion for about 3 to 4 minutes, stirring occasionally, or until tender. Add garlic, carrot and tomatoes; cook, stirring frequently, about 5 minutes or until all ingredients are tender.

  2. Into an 11x7-inch baking dish, spoon about 1/4 of the sauce. Arrange three alternate layers of leggplant slices and tomato sauce. Bake eggplant lasagna at 350 for 30 to 40 minutes.

  3. If you are not vegan, you can add Parmesan cheese (or any cheese you like) on top of it.
