Vegan alternative to egg salad. Albeit, to me it doesn't taste much like egg salad, it's still pretty tastey and nutritious.

Recipe Ingredients for Vegan 'Egg Salad'

455 g (Nasoya) Extra firm tofu
1/2 cup Yeast, Nutritional T6635
2 tbsp olive oil
1 tbsp lemon juice
1 salt and pepper to taste
15 black olives
1 tsp paprika
3 tbsp Original vegenaise

Recipe Directions for Vegan 'Egg Salad'

  1. Mix nutritional yeast, olive oil, lemon juice, salt & pepper, black olives, paprika (can also use alepo peppers), and vegan mayo in a bowl.

  2. Squeeze excess water from tofu and crumle into bowl. Mix all ingredients together and enjoy. Keeps for 7 days.

  3. I eat mine in a wrap, tortilla, or sandwiched between two slices of ezekiel bread.
