I could only find light mayonnaise on cc. But I used vegannaise.

Recipe Ingredients for Vegan Egg Salad

14 oz firm tofu
2 dill pickles
5 scallions
5 celery stalks
1 teaspoon chopped garlic
28 gram Light Mayonnaise
2 tablespoons dijon mustard

Recipe Directions for Vegan Egg Salad

Dry tofu and cut into 1/2 inch cubes. Cut pickles celery and scallions and add to tofu. Mix mayonnaise garlic and mustand. Stir both mixtures together. Serve on bread or eat as a snack. This is better if it sits overnight.
