Recipe Ingredients for Vegan Date Cake

16 dates, pitted
3/4 cup plain or vanilla soymilk
1/4 cup sugar
1 cup whole wheat flour
1/4 cup applesauce
1 teaspoon baking soda

Recipe Directions for Vegan Date Cake

  1. 1. Preheat oven to 350 degrees F and oil an 8x8 inch metal baking tin.

  2. Put dates, soymilk and sugar in a blender or food processor and blend/process until dates are pureed and ingredients are well combined.

  3. Alternatively, cook the dates with the sugar and milk until mushy, then purree.

  4. Pour date mixture in a large bowl and add the applesauce. Stir well to incorporate. Add flour 1 tablespoon at a time and mix slowly.

  5. When you have incorporated all of the flour into the batter, pour into the baking pan and bake for 20-30 minutes or until toothpick test comes out clean.

  6. Serves: 8
