Recipe Ingredients for Vegan Cream of Spinach

1 large onion, chopped
2 medium potatoes, peeled and chopped
3 cups water
2 teaspoons salt
1 pound fresh spinach, cleaned and stemmed
3 tablespoons minced garlic
1 1/2 cups unsweetened soymilk, hot
1 pinch white pepper
1 pinch nutmeg

Recipe Directions for Vegan Cream of Spinach

  1. Saute the onion in a bit of water until tender.

  2. Add the three cups of water and the potatoes, bring to a boil, and cook at a simmer until the potatoes are tender.

  3. Stir in the spinach, garlic, and salt, and puree everything in a blender.

  4. Return the puree to the soup pot, add the hot milk and other seasonings, and heat gently without boiling until serving time.
