Recipe Ingredients for Vegan cowboy cookies

2 cups oats
1 1/2 cups whole wheat flour
1/2 cup flour
1/4 tsp baking soda
1 1/4 tsp baking powder
1/4 tsp salt
2/3 cup water
1/4 cup brown sugar
1/4 cup splenda
1/2 cup applesauce
1 tbsp flax seed
1 tsp vanilla
1/2 cup coconut
1/2 cup pecans
1/2 cup raisins
1/2 cup dates
1/2 cup dried apricots

Recipe Directions for Vegan cowboy cookies

  1. combine dry ingredients: oats, flours, soda, baking powder, and salt.

  2. Mix water with sugars, applesauce (or soy pudding), ground flax and vanilla.

  3. Mix 1/2 the flour into the wet.

  4. Add the rest of the flour.

  5. Add the add-in's.

  6. Shape 1 inch balls, flatten slightly, place on greased cookie sheet.

  7. Bake at 350 for 14-16 minutes.

  8. Let rest 4 minutes before moving to cooling rack.

  9. Makes 32 cookies
