A hearty and colorful vegan corn chowder. Bonus: It's Gluten free, also!

Recipe Ingredients for Vegan Corn Chowder

2 tbsp Coconut Oil, Refined, Organic
0.5 cup, chopped Onions
3 clove Garlic
2 cup Red and Green Bell Peppers
1 cup, chopped Carrots
2 cup kernels Corn, Sweet, Yellow
0.25 cup Corn Flour, Masa, Enriched
16 fl oz Vanilla
0.5 tsp Salt, Table
0.5 tsp Pepper, Black
1 tsp Nutmeg, Ground

Recipe Directions for Vegan Corn Chowder

  1. Saute onion, peppers, and garlic in coconut oil until softened.

  2. Add masa corn flour and stir quickly to coat peppers and absorb oil.

  3. Add 2 cups of unsweetened almond milk, stirring well, and bring to a boil.

  4. Add carrots and sweet corn, and simmer until veggies are soft.

  5. Season to taste with salt, black pepper, and nutmeg.
