A simple and delicious Vegan Corn Chowder. To make a creamy soup, cook the corn kernels separately and blend them with the corn stock to make a creamy vegan soup base.

Recipe Ingredients for Vegan Corn Chowder

2 oz Olive Oil,
1/2 Onion (small dice),
5 cloves Garlic (minced),
1 Celery Stalk (small dice),
1 Carrot (small dice),
1 c. Sweet Potatoes (small dice),
1/2 Yellow Pepper (small dice),
1/2 Green Pepper (small dice),
1/2 Red Pepper (small dice),
1/2 Zuchinni (small dice),
6 ears Corn (shaved),
1 Salt and Pepper

Recipe Directions for Vegan Corn Chowder

  1. Put shaved corn cobs in stock pot and cover with water.

  2. Bring to boil for approximately 5 minutes, remove from heat.

  3. In heavy bottom pot, add oil and sweat garlic and onions.

  4. Season with salt and pepper to enhance flavor.

  5. Add all vegetables, coat, and cover with corn stock (minus the cobs).

  6. Bring back to simmer until potatoes are tender.

  7. Adjust seasoning, serve.
