This is a super low fat, low calorie and DELICIOUS coffee cake with an excellent crumble topping

Recipe Ingredients for Vegan Coffee Cake


Topping:
1/2 cup unbleached all-purpose flour
1/4 cup brown sugar
2 tbsp smart balance light, melted
1 tsp ground cinnamon

Cake:
1 cup vanilla or plain soymilk
1 tsp apple cider vinegar
2 1/4 cups unbleached all-purpose flour
1 tsp ground cinnamon
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 cup brown sugar
1/2 cup splenda no calorie
1 cup applesauce
1 tsp vanilla

Recipe Directions for Vegan Coffee Cake

  1. Blend the topping ingredients and set aside.

  2. Add vinegar to soymilk and set aside.

  3. Blend all dry cake ingredients and all wet ingredients in seperate bowls.

  4. Alternate adding applesauce mixture and milk mixture to the dry mixture and blend until smooth.

  5. Pour into 9 x 13 in pan and top with crumble.

  6. Bake at 350 degrees 50 minutes, or until done
