CHOCOLATE N PUMPKIN MUFFINS WITH FIBER.

Recipe Ingredients for Vegan Chocolate Pumpkin Muffins 4 Star ****

1 cups Old Fashioned Oats
125 g Gluten-Free Flour
1 1/2 cups Pumpkin - Canned
1 c firm tofu
1 cups Fiber One
2 T canola oil
1 c Trader Joe's dark chocolate chips
1 tsp Baking Powder
1 tsp vanilla
1/2 tsp nutmeg
2 tsp cinnamon
1/2 tsp nutmeg or ginger
1/2 c baking splenda
1/2 c apple sauce

Recipe Directions for Vegan Chocolate Pumpkin Muffins 4 Star ****

  1. First grind up the fiber one in a food processor with the oatmeal to a fine powder. Mix all dry ingredients except choco chips together.

  2. In seperate bowl beat tofu, apple sauce together and add pumpkin and vanilla

  3. Mix the wet with the dry a little at a time. Fold in choco chips. May add splenda to dry ingredients if desired.

  4. Spray muffin pan with Pam. Fill the muffin tin up and over make them high and all cups even. These do not rise very much so make them really full. Bake at 425 in a preheated oven for 25-35 minutes. Watch them for desired doneness. Insert a toothpick should come out clean. They should not be mushy on top but firm.
