A very easy and delicious, dark chocolaty dessert, best eaten warm. It's also great with chopped walnuts or pecans.

Recipe Ingredients for Vegan Chocolate Pudding Cake

1 cup whole wheat flour
1 cup sugar
1/2 cup cocoa
1/2 tsp salt
2 tbsp Smart Balance vegetable oil
1/2 cup vanilla soy milk
1 1/4 cup hot water

Recipe Directions for Vegan Chocolate Pudding Cake

  1. Preheat oven to 350 degrees. Spray an 8x8-inch pan.

  2. Mix together flour, 1/2 cup sugar, 1/4 cup cocoa and 1/4 teaspoon salt. Add vegetable oil and soy milk and mix until smooth.

  3. Spread in pan. Sprinkle remaining 1/2 cup sugar, 1/4 cup cocoa, and 1/4 teaspoon salt over top. Pour hot water over everything.

  4. Bake 35-40 minutes until bubbly.
