Recipe Ingredients for Vegan Chocolate Cupcakes

1 cup soymilk
1 teaspoon apple cider vinegar
3/4 cup granulated sugar
1/3 cup canola oil
1 teaspoon vanilla extract
1/2 teaspoon chocolate extract, or vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder, Dutch-processed optional
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Recipe Directions for Vegan Chocolate Cupcakes

  1. Preheat oven to 350F and line a muffin pan with cupcake liners.

  2. Mix together the soymilk and vinegar and let sit to curdle.

  3. Meanwhile, sift all dry ingredients (excluding sugar) together in a separate bowl.

  4. Add sugar, oil and vanilla to the soymilk mixture and beat until foamy.

  5. Add the dry ingredients to the wet in two batches and stir until only small lumps remain.

  6. Fill cupcake liners 3/4 of the way full and bake for 18-20 minutes.
